Land of vines

"Sublimate with a deep respect for the essence of the product, 

without transforming it.
Chef Nicolas Masse's guiding principle is pure and refined. 

The plate focuses on highlighting the fruits and vegetables of 

our organic vegetable garden, meat, dairy and fish products from our own farms 

or artisanal production in Aquitaine.


The newly redecorated room has been completely 

painted in a deep carbon colour to create an enveloping box.
Decorative elements, lighting and tableware 

are available in pure, mineral shades, to finally
focus attention on the plate and the products that come on stage.
Only the flowery carpeting catches the eye and makes us navigate 

between the rare plants and herbs of our vegetable garden.

Discover the

perfect matches

The experience would not be complete without wine, the fetish fruit of this land. The dishes thus sublimate the sumptuous range of wines from Pessac Léognan and elsewhere, presented by the Head Sommelier Aurélien Farrouil.
